We offer a range of certificates and diplomas in cookery, patisserie and hospitality.
All the courses listed below are available in both our Melbourne and Sydney campuses and can be packaged together if you want to study up to a higher-level qualification – packages can usually be completed in a shorter amount of time. Certificate III in Commercial Cookery
This Certificate III programme will give students a solid grounding in the cookery skills that you need to work in a commercial kitchen. Subject areas include: Basic methods of cookery; appetisers and salads, stocks, sauces and soups; vegetables, fruit, egg and farinaceous dishes; preparing and cooking meat, poultry and seafood; cakes, pastries and breads; desserts; customer relations and hospitality knowledge; health and safety, security and workplace hygiene, buffets, cost effective menus, menus for special dietary and cultural needs.

Certificate IV in Commercial Cookery
Students can move on to the Certificate IV in Commercial Cookery to learn more skills in kitchen and team management. Subject areas include: Cook-chill and cook freeze foods; gateaux, tortes and cakes; chocolate confectionary; kitchen management; team management; finance management; lead and manage people; coordinate cooking operations; quality control; stock control.

Certificate III in Patisserie
Indulge your passion for the sweet life with the delicious art of the patissier or pastry chef. Subject areas include: Cakes, pastries, yeast based bakery products; cookery skills; prepare and serve espresso coffee; pastries; petits fours; gateaux, tortes and cakes; desserts; handle and serve cheese; safe food handling practices.
Duration: 1 year

Certificate IV in Patisserie
Develop your patisserie skills further with the Certificate IV qualification. Subject areas include: Cake and cookie decorating; chocolate confectionary; sugar and chocolate decorative work; sweets buffets and showpieces; coordinate cooking operations; managing finances; food and beverage.
Duration: 1.5 years

Diploma of Hospitality
On completion of the certificate programmes in Patisserie you may extend your studies into the Diploma and Advanced Diploma of Hospitality to broaden your understanding of hospitality and prepare for management roles within the industry. Subject areas include: Business operations; hospitality budgeting; workplace diversity; legal knowledge for business; rostering; service quality.

Advance Diploma of Hospitality
This qualification builds on the skills and knowledge from the Diploma of Hospitality to further develop your understanding in the areas of: business planning, financial operations, managing human resources, marketing strategies and property management. Subject areas include: Business planning; financial operations; human resources management; marketing strategies ; asset management.
